So to celebrate, I wanted to share one of my favorite recipes from the book… ![]() If I do say so myself — these brownies taste divine! They’re full of chocolate decadence... packed with healthy fats and energy-boosting polyphenols… and have a nutty, chewy texture to boot. Better yet? This recipe cuts way down on the heavy starches, lectins, and sugars you’ll find in most brownies. So instead of feeling sluggish and bloated afterwards… You can eat these MCT Brownies and still have energy to spare! Here’s how to make them:
Ingredients (makes 16 brownies)
For the candied nuts:*
To make the candied walnuts:* 1. Preheat the oven to 350F. As it’s warming up, line a baking sheet with parchment paper or a silicone baking mat. 2. In a large bowl, combine your walnuts, egg whites (or aquafaba), sweetener, cinnamon, sea salt, and black pepper. Then stir everything together until the nuts are evenly coated with the spice mixture. 3. Spread the coated walnuts evenly over your prepared baking sheet. Then bake them for 10 to 15 minutes, stirring them occasionally until they’re fragrant but not burnt. When they’re ready, remove them from the oven and let them cool. In the meantime, keep the oven on. *By the way, it’s fine to make these brownies without the candied nuts. But if you ask me, they’re extra delicious with them! To make the brownies: 1. Line an 8-inch square baking dish with parchment paper. 2. In a large bowl, whisk the almond flour, cocoa powder, baking powder, and sea salt. Then set the mixture aside. 3. In a saucepan, whisk the coconut oil, MCT oil, and sweetener. Next, cook them over low heat and stir continuously until the sweetener incorporates into the oil and the mixture is no longer grainy. When you’re done, remove the pan from the heat. 4. Stir your oil mixture into the bowl with dry ingredients. Then let everything rest in the bowl until it’s just warm. 5. Next, stir in the eggs one at a time. Once both of the eggs are mixed in, fold in the vanilla and spiced nuts. 6. Transfer the brownie mixture to your prepared baking dish and bake it in the oven for 20 to 25 minutes, until the center is firm and begins to crack. (Tip: If in doubt, you put a toothpick in the center of your brownie mix. If the toothpick comes out clean, your brownies are ready to take out of the oven.) 7. Let the baked brownie mix cool down completely before slicing and serving. Speaking from experience, it can be tempting to eat these brownies hot out of the oven. But they’re pretty delicate until they cool down, so I recommend letting them sit for a while. Believe me, they’re worth the wait! I think you and your family will love these brownies, Henry. They’re fun to whip up when you’re entertaining visitors… Perfect as a midday treat or evening dessert… Plus, they’re a delicious way to sneak more cocoa polyphenols and healthy fats into your diet, too. (In fact, whenever Penny and I make these brownies with our grandkids, they can never tell they're full of healthy ingredients!) So give these brownies a whirl and let me know what you think.
